Here goes. First, chop up a medium onion and place in skillet with about 4 tbsp. olive oil. Cook until the edges turn golden brown. Then add garlic, how much depends on your taste. I put 4-5 cloves in using a garlic press. This you cook for maybe 30-45 seconds..until fragrant. Then, throw some red wine in and allow it to cook down. Maybe a 1/2 cup. Sample the wine first. It should have a little sweetness to it. Have a sip for me.



Ah yes, this was last night’s feast and let me tell you, there was not one speck of spaghetti or sauce left on my plate to offer the visiting doggies. We didn’t even have to put the plates in the dishwasher.
This is a keeper, a winner, a do over and over and over recipe.
